The study indicates that pouring hot water slowly increases the contact time between the water and coffee grounds, while pouring from a greater height improves mixing. This combination allows for more flavor compounds to be extracted from the same amount of coffee beans. The researchers found that achieving an optimal pouring technique creates a “mini avalanche” effect in the coffee bed, which enhances the overall flavor extraction.

To test their findings, the research team simulated the pouring process using silica particles and lasers, demonstrating how water flow disrupts the coffee grounds. The results confirmed that a properly executed pour leads to a fuller-bodied coffee without the need for additional coffee.
